Our Nelson campus has professional training spaces built to reflect the layout, equipment and tools used across real kitchens, cafés and bars in Aotearoa.
Kitchen
- Moffat combi ovens for flexible, efficient cooking
- Sous-vide water bath used for precise, low-temperature techniques
- Blast chiller for rapid cooling in line with food safety standards
- 19 gas cookers with ovens
- Ice-cream machine
- A full set of kitchen equipment including pans, utensils and small appliances
Bar and beverage
- A purpose-built bar for learning beer, wine and cocktail preparation
- Coffee lab with four commercial espresso machines and two grinders
Service area
- A front-of-house training space set up like a working café, used for service practice and demonstrations
All facilities are well maintained and set up to support hands-on hospitality and cookery training in a realistic environment.
