To develop an understanding of the methods currently used for harvest and slaughtering aquatic species, and to instil an appreciation for correct handling practices. Students gain awareness of a range of processing methods including value-added techniques, and the spoilage processes that affect products quality. This course provides a working knowledge of public health legislation and other legal considerations across the processing chain from capture to consumer. Student’s will also explore current trends in public demand and preference for aquatic products.
